Luis Martinez, vice president of research and development (R&D), joined Mom’s Meals in 2025. In his role, Martinez leads the company’s meal innovation strategy and oversees the end-to-end product development process. He provides strategic leadership across emerging food trends, ingredients and technologies to deliver innovative, nutritious and scalable meal solutions that support Mom’s Meals’ food as medicine approach.
Prior to joining Mom’s Meals, Martinez served as senior vice president of R&D and commercialization at Rubix Foods, where he led innovation and commercialization efforts behind product launches for leading restaurant chains and consumer packaged goods brands across the U.S. During his tenure, he built and led high-performing teams across innovation, product development and commercialization, supporting multiple stages of company growth, including two successful private equity transactions. His work spanned more than 40 manufacturing facilities nationwide. Earlier in his career, Martinez held roles at The Coca-Cola Co., Darifair Foods, Tyson Foods and the University of Florida.
Martinez earned a Master of Science degree in food science with a minor in agribusiness management from the University of Florida, along with bachelor’s degrees in food science and human nutrition and food engineering from the University of Florida and ESPOL. He is an active board member of the Florida Institute of Food Technologists and has served in leadership roles supporting industry education and student scholarships.
